The $unninge Floating floor is 10mm + Scocia for trim and underlay will add weight and using a bit of simple maths this increase is easy to calculate, you may have trouble with the fridge door assuming the fridge is floor mounted as the flooring + 2mm underlay will bring the raise in floor height to 12mm, but easy tested by dry laying in front of fridge to check for clearance, However if you lay up to the fridge you will not be able to remove the fridge, a much better way would if clearances above fridge allow would be to extend the floating floor under the fridge. Laying the Floating floor is dead easy in open floor areas the fun comes around he edges and under/next to fixed furniture. PM me when you get closer to doing the job or better still use "Skype".
Hope I have not muddied the waters.

Hey Rattles
By floating floor do you mean it is not nailed ? If so will there be any issues with the boards bouncing or moving when the caravan is on the road ?
Cheers
PS Just about to start on the 12v side of Wichway.

Lockyer - I would not expect for them to move much as they are clipped together with their J shaped tongues and would have 18mm Quad or 30mm Scocia over the edges and as the gap around the edged need only 8mm (16mm max movement) or less for expansion due to the short runs, should be fine and the 10mm laminate floating will weigh more than Tiles but if the floor is striped back to the ply the increase in weight will not be as great, of course the size of the Van and Van layout will decide the overall increase in weight.
I have installing 14mm Bamboo which is solid timber and very heavy unlike the Laminates which are mainly Craft Wood with a thin laminate veneer.

Perer92 - Yes more weight and Height problems, what ever you do you will need to flatten the floor, just one of the joys in renovating anything.
Bat on and you will get to the end of this renovation journey.

PS Have you thought of Sanding the Highs and Glueing the two surfaces together using a flexible glue or even Liquid Nails, use ribs of glue to fill th hollows providing the spans are not too great I don't think you will notice the deflection as expansion over relatively short length of a Caravan floor should not cause any problems and will reduce the height increase to 10mm + glue thickness.

That stuff looks like maybe a reasonable solution to many of your cupboard door issues Peter? Especially if you are painting white so no joins visible on larger ones.
