Just a thought about my recent adventures in the culinary arts. Have been making good use of the gas bottle BBQ You blokes remember this one don't you? Well the Missus has been making up lamb rissoles with lemon zest and all sorts of other niceties. So guess who got to do the BBQing? ;D ;D ;D Me Captain Bonfire Man they were delicious. That was a week ago..... Today? Bit of a bake day..... I likes me bread So how's about this lot? Why all the baking and cooking etc.... Dunno just have decided to do a bit of this and that of recent. Lamb rissoles look delicious ... but the bread, am I the only person that thinks you unwrapped these from a Bakers Delight carry bag? Subbie

Home made bread is wonderful, you get the smell of it cooking as well as the taste. nom nom nom But i'd be happy to get a copy of the lamb rissole recipe ;D Donna

Hey Ladies Thanks for the thumbs up The bread is definitely not store bought Not bad for the first time try at plaiting bread. Next time will leave the plait more open so there is room for the bread to rise. Here's the recipe you asked for. Lamb Rissoles 500gms lamb mince 2 slices of bread soaked in water and excess water squeezed out 2 teaspoons of Chilli flakes 1 tablespoon Cumin powder Zest of one Lemon or Lime Salt and pepper 2 tablespoons of Tomato sauce 1 tablespoon of Worcestershire sauce 1 egg 1 tablespoon of fresh Thyme Mix up in a large bowl - use your hands Form into small rissoles Smaller rissoles cook faster, are more flavoursome and are bite size. Very handy for taste testing These can be made well in advance and let sit in the refrigerator until you are ready to cook. It also gives the flavours time to develop. Cook on the BBQ ;D ;D ;D ;D ;D Enjoy with yogurt sauce, chopped tomato, onion and lettuce in tortillas Yogurt sauce250gms plain yogurt 1 teaspoon fresh mint I crushed garlic clove Recipe courtesy of the Missus. Bread cheat Use a Laucke bread mix Like the "Barossa Valley Sour Dough Style" mix Read the mixing instructions for the best results
I added 2 cups of Atta flour (we got it from an Indian grocery store) Because I had it in the freeze and wanted to use it. Also add 30 -40 ml of a good olive oil It acts as a preservative and makes a nice smooth dough
Came out very nice and tasty
Did another one with 1 cup of potato flour and 1 cup of Atta flour and it came out really soft and smelt like it had sugar in it Which it didn't. Had a texture similar to donuts
You can also coat the surface with egg or water or milk to give it a shine.
Sometimes we roll the dough in Semolina before putting in the baking tin.
You can also sprinkle any number of different seeds on the top to make it your own taste.

Hey Andy Yep that steak was so tender I cut it with a butter knife.... with ease. Rabbit food you say..... hmmmm Might have to try some rabbit..... for food. ;D ;D Cheers Atog

Hey Atog Sorry if I confused you ...rabbit food=salads in my place ;D ;D My idea of a good bbq is meat,meat,meat and more meat plus spuds,onions and egg....definately no rabbit food ;D ;D Cheers Andy

Hey Andy No confusion.... just a badly executed pun on my part. ;D ;D ;D ;D Looking at the cooker... hmmm bit daggy really isn't it. So ... out with the grinder this morning and into it with a wirebrush. Off to Bunnings for some heat proof paint.... Result? Baked some bread in it after initial heat up... Turned out a bit too soft on top so finished it in the oven. Atog

Hey There Atog, That would be right, just because we didn't make it up your way this time, Good to see you didn't waste the steaks that you probably had waiting for us. Just you wait until the right time of the year, Young Man !!!! I like my Steak well done and the eggs sunny side up, just off hard, the chips should be nice and crispy, and we don't mine a bit of Rabbit food on the side as well. Order placed, tongue hanging........ we'll catch you before too long, in the mean time, you're doing a great job with that gas bottle, keep practicing, that bread looks almost perfect. cheers kiwijim ;D

Hey Jim If you ever get out of that deep freeze you call WA and up to sunny Qld. At least sunny during the winter months... Your Porterhouse, melt in your mouth, cut with a butter knife, steak will be waiting....... In the mean time, you will just have to eat it with your eyes.... and it will remain medium rare with a just runny egg until then. That told him. ;D ;D Still reckon you need a flxible clipper as a bus.... also known as a pocket rocket. Sadly most of those rebuilds take a good few years and you won't get change out of 300k Cheers Atog

G'day Atog, One day I'll keep you to that Steak promise, ;D ;D The temp here in the West isn't as bad as what we struck over in Sth Aussie, that is, it's not freezing here but not that flash at around 7deg over-night. Thanks for sending that video of the Clipper bus's "Man" it would be great to convert one of them into a Motor Home but, not at the price that they are worth. You may recall, that when we were up your way, there was some sort of parade on in town ? Well in that parade there were two Clipper's fully restored and sounding great. Keep an eye out for them Atog, could be your next project if you're lucky. ;D ;D ;D kiwijim
